2018 Estate Syrah & Grilled Chicken with Cherry Chipotle BBQ Sauce and Mole Baked Beans

Grilled Chicken with Cherry Chipotle BBQ Sauce

Ingredients:

6 Chicken Breasts, butterflied or pounded flat

2 cups canned crushed tomatoes

2 tbsp diced chipotle in adobo

1/4 cup apple cider vinegar

2 tbsp cherry preserves

1/2 tsp salt

1/2 tsp onion powder

1/2 tsp garlic powder

salt and pepper

Directions:

Mix together all ingredients except chicken in small saucepan. Bring sauce to a boil then reduce heat and simmer for 20 minutes until thickened. Season with salt and pepper to taste. Marinate chicken for atleast 3 hours with 1/2 of the sauce, reserving remaining sauce for basting. Grill chicken for seven to eight minutes per side, or until the internal temperature reaches 165 degrees F, basting before turning with the remaining sauce. Allow chicken to rest for 10 minutes covered with foil before serving with Mole Baked Beans.

Mole Baked Beans:

Ingredients:

1 lb Great Northern beans, picked over and soaked overnight or 4 cans cooked Great Northern beans

2 tbsp diced chipotle in adobo

3 tbsp olive oil

4 cloves garlic, minced

1 medium onion, diced

4 slices of bacon, chopped (optional)

4 tbsp tomato paste

¼ cup dry red wine

1/8 tsp ground nutmeg

1/8 tsp ground cloves

1/4 ground cumin

1/4 tsp smoked paprika

1/4 tsp chili powder

2 oz dark chocolate, chopped

salt and pepper

Directions

Drain and rinse beans. If using dried beans, place in pot and add water until beans are just covered. Bring to boil, then reduce heat to lower and cook covered at a simmer until beans are tender (approximately 1 hour). In a large saucepan or dutch heat olive oil over medium heat and cook onion until soft. If using, add bacon and cook until browned. Add garlic and tomato paste and cook for one minute. Deglaze the pan with wine, scraping bottom to loosen any solids, and cook for 5 minutes until reduced slightly. Stir in 4 cups of water, brown sugar and dried spices. Bring to a boil and add beans. Reduce heat, cover and allow to cook at a simmer until sauce has thickened. Alternately, you can place the dutch oven, covered, in a 350 degree F oven or entire mixture can be cooked in a slow cooker on low for 6-8 hours. Before serving, stir in chocolate and season to taste with salt and pepper.

*Beans can be made ahead up and reheated, until the point of adding chocolate.
